Soya Bean Salad
As the name implies, this salad uses soya bean as its main ingredient. The numerous health benefits of soya bean are now well known across the world and as a result it is consumed widely. Soya bean is packed with protein, offers a multitude of health benefits and can be consumed as a cooked legume. Soybean, soymilk and soy protein have gained popularity in recent times.
Soya beans come with chock full of nutrients and they are especially known for their perfect blend of protein and fibre. Adding soya beans to our diet helps trigger metabolism, lowers the risk of cancer, promotes heart and gut health, regulates blood glucose levels and eases menopausal symptoms. Full of vital minerals, soya beans are effective in reducing bone loss and uplifting the bone mineral density in postmenopausal women.
Ingredients:
- Dried soya beans – 1 cup
- To Be Finely chopped:
- Onion, tomato, capsicum, cabbage and coriander leaves
- Shredded carrot
- Chilli flakes
- Lime juice
- Salt to taste
The quantity of the ingredients can be varied according to personal preferences.
Method
- Soak soya beans for 4 hours and pressure cook with a little bit of salt for 2 whistles.
- Once cooled open the lid, drain the beans and transfer to a bowl.
- To this add the chopped vegetables, lime juice and chilli flakes.
- Mix well and serve.
