Broccoli Soup
“Mumma, make something interesting today” my 4-year-old son came up to me. When I asked him to give me half hour, he goes “No, but I’m hungry now!” I put together few ingredients.. Now there’s a happy 4-year-old in front of me!
Cream of broccoli soup is almost a scrumptious meal. It has excellent antioxidant properties and is a great source of vitamin C. The crunchy almond slivers added for garnishing give it an extra zing. I love the colour it brings to the plate.
Who doesn’t love garlic bread, especially with cheese on top! I use store bought baguette, slice it up, and add the desired toppings. Just about 3-4 min in a preheated oven… I promise you, your kitchen will smell divine!
Ingredients:
- Olive oil
- Chopped garlic
- Some parsley leaves
- One finely chopped onion
- One small head of broccoli – cut into florets
- Salt to taste
- Crushed pepper
- Half cup milk (skimmed or full fat based on your diet)
Method:
Add 2 spoons of olive oil to pan. Once hot, add the chopped garlic and sautée for a minute. The roasted garlic gives good flavour to the final outcome. Add the chopped onions, sautée some more. Once the onions turn translucent, add the broccoli florets. Add salt as per requirement. Add the milk and let it simmer. Once the broccoli is cooked, let it cool and blend. Use the parsley leaves for garnishing. Add crushed pepper before serving. You can add almond slivers for garnishing.
Garlic bread
Ingredients:
- Chopped garlic
- Butter
- Mixed herbs seasoning
- Cheese
- Salt to taste
Method:
Pre heat the oven before you start with the preparation. Use finely chopped garlic. Mix it in melted butter, a pinch of salt and mixed herbs. Stir well. Apply it on the bread slices. Add grated cheese on top and put it in the oven. In about 4-5 min, your garlic bread should be ready! You can also use the regular bread, cut into slices. Add a dash of olive oil on top before serving.
