Healthy Peanut Salad
This peanut vegetable salad is healthy and nutritious. It is a tasty and refreshing salad which is crunchy, spicy and tangy. This salad will surely tingle your taste buds.
Peanuts are rich in vitamins and minerals and are well-known suppliers of proteins and fats.
Ingredients:
- Raw peanuts – 1 cup, boiled in a pressure cooker with salt
- Cucumber, skin removed and finely chopped – 1/2 cup
- Onion, chopped – 1 medium
- Tomato, finely chopped – 1 small
- Raw mango, finely chopped – 1/2 cup
- Green chilli, finely chopped – 1
- Mint and coriander leaves
- Red chilli powder and chaat masala – according to individual taste
- Lime juice of half lime
Method:
- First, soak the peanuts for minimum 4 hours and then boil the peanuts with salt in pressure cooker for 2 whistles.
- Then, add all the ingredients to a large mixing bowl.
- Toss well until all the ingredients are mixed and well-seasoned.
- Set aside for 15 minutes so that the flavours are well blended before serving.
