Ragi Koozh
As Chennai and indeed the whole of Tamil Nadu reel under the fury of the scorching summer sun, here is a perfect breakfast recipe to cool as well as strengthen the body.
Ragi koozh (porridge) is quite common in the villages of South India. It satiates hunger effectively and boosts energy as well giving farmers the much needed strength to carry out their everyday activities under the sun.
Ingredients:
- Ragi powder: 1 cup
- Cooked rice: ¼th cup
- Buttermilk: As required
Method:
- Take 1 cup of ragi powder and add 1/4th cup of cooked rice to it.
- Pour water.
- Leave it outside overnight to ferment.
- Next day, boil double the quantity of water in a pan or kalchatti.
- When the water starts to boil, pour in the ragi mix and stir.
- Allow it to cook.
- After some time, the colour of the mixture changes and the raw smell disappears.
- At this point, remove it from the flame.
- Take the required amount of cooked ragi and mix it with the required amount of buttermilk according to individual taste.
- This can be had with small onions, green chillies or pickle.
- The remaining can be stored in the refrigerator for up to 4 days.
