Veppilakatti – Lime Leaves Pickle
This lime leaves pickle recipe is a traditionally made healthy dry pickle. It is a wonderful accompaniment to many dishes including curd rice and always has the consumers wanting more.
Ingredients:
- Lime leaves – 1 cup
- Dry red chillies – 2 to 3
- Curry leaves – a few
- Tamarind – a small ball (or lime juice can also be used)
- Asafoetida (hing powder) – ½ tsp
- Salt to taste
Method:
- Wash the lime leaves & curry leaves; pat them dry.
- Dry roast the red chillies until crispy. Keep aside.
- Tear the stems off the lemon leaves.
- Add the lime leaves, roasted red chillies, curry leaves, salt and asafoetida to a blender and blend. Do not add water. Grind coarsely.
- Make them into small balls by adding little lime juice or tamarind water and store them in an airtight container.
