
The health benefits of millets are well-known and when combined with vegetables, the benefits increase manifold. This millet vegetable bowl is an incredibly delicious, healthy, one-dish meal with some pretty great flavours.
Ingredients
- Foxtail millet whole grains – 1 cup
- Mixed vegetables (carrots, peas, beans, etc.), chopped – 2 cups
- Spring onions, finely chopped – 4
- Garlic cloves, minced – 2-3
- Broccoli, blanched – ½ cup
- Cooked chickpea or butter beans or any other beans – ½ cup
- Cooked soya chunks (optional) – ½ cup
- Salt to taste
- Oil – 2 tbs
- Pepper to taste
- Chilli paste to taste
- Soya sauce to taste
Method:
- Boil 2 cups of water.
- Wash the millet and add to the boiling water.
- Allow it to cook.
- Drain the water and keep aside.
- Add oil to a heavy-bottomed pan.
- Sauté the spring onions and minced garlic, and add all the vegetables.
- Cook on high heat for 2 to 3 minutes.
- Add the beans and soya chunks.
- Add salt, soya sauce and chilli paste.
- Mix well and cook for a minute.
- Add the cooked millet and toss.
- Serve hot.
