Millet Vegetable Bowl with Soya Chunks and Butter Beans

The health benefits of millets are well-known and when combined with vegetables, the benefits increase manifold. This millet vegetable bowl is an incredibly delicious, healthy, one-dish meal with some pretty great flavours.

Ingredients

  • Foxtail millet whole grains – 1 cup
  • Mixed vegetables (carrots, peas, beans, etc.), chopped – 2 cups
  • Spring onions, finely chopped – 4
  • Garlic cloves, minced – 2-3
  • Broccoli, blanched – ½ cup
  • Cooked chickpea or butter beans or any other beans – ½ cup
  • Cooked soya chunks (optional) – ½ cup
  • Salt to taste
  • Oil – 2 tbs
  • Pepper to taste
  • Chilli paste to taste
  • Soya sauce to taste

Method:

  • Boil 2 cups of water.
  • Wash the millet and add to the boiling water.
  • Allow it to cook.
  • Drain the water and keep aside.
  • Add oil to a heavy-bottomed pan.
  • Sauté the spring onions and minced garlic, and add all the vegetables.
  • Cook on high heat for 2 to 3 minutes.
  • Add the beans and soya chunks.
  • Add salt, soya sauce and chilli paste.
  • Mix well and cook for a minute.
  • Add the cooked millet and toss.
  • Serve hot.
