Moringa Leaves Soup/Murungakeerai Soup/Drumstick Leaves Soup
Drumstick leaves or moringa leaves have a host of benefits. They improve the body’s immunity and are a good source of proteins, calcium and iron. Lactating mothers are encouraged to consume moringa leaves as it is said that they improve breast milk production.
This recipe is extremely healthy and easy to make as well. It is to be noted that leafy vegetables are best cooked in an open pot instead of a pressure cooker or closed vessel.
Ingredients:
- Moringa leaves – 1 small bunch
- Garlic pods – 5
- Shallots – 10 (or alternatively 1 onion)
- Jeera – 1 tsp
- Coriander seeds – 1 tsp
- Pepper powder – 1 tsp
- Salt to taste
- Ghee/butter
Method:
- Use drumstick leaves along with the stem but discard the thick stem.
- Wash the leaves.
- Add ghee/butter to a pan.
- Add the garlic, onions, jeera and coriander seeds and fry for a minute.
- Add the leaves.
- Cook for 2 minutes.
- Add 3 cups of water.
- Cook without the lid.
- Once the leaves and the ingredients are well-cooked, switch off the flame and allow to cool.
- Once it cools, grind and filter with the help of a sieve.
- Add salt and pepper powder to taste.
- Add some butter for extra flavour when serving.
- Serve hot.
