Fresh Mango Coconut Chia Seed Pudding

A dessert for breakfast – how good does that sound!

A healthy coconut chia pudding is rich, creamy, easy to make and requires no baking! It is delicious as breakfast or dessert.

Chia seed pudding takes very few ingredients to make, and it can keep you full all morning.

Chia seeds – these little wonder specks are filled with fibre (5 grams in just one tablespoon). Chia seeds contain calories as low as 101 per ounce, and yet are packed with fibre, protein, omega-3 fatty acids and various key micronutrients. Thanks to their versatility and immunity boosting properties, chia seeds can be easily incorporated into our regular diet by including them in a variety of soupssalads, beverages, traditional dishes and baking delights. In addition to this, they offer a range of health benefits which makes them a great addition to any meal.

Ingredients:

  • Coconut milk – 2 cups
  • Chia seeds – 5 tbs
  • Honey or maple syrup – 1 tbs
  • Fresh cut mangoes
  • Mango purée – ½ cup

Method:

  • In a bowl, stir together the coconut milk, chia seeds and maple syrup (or honey) so that the chia seeds are evenly distributed throughout.
  • Cover and refrigerate for 4 hours or overnight.
  • Before serving, stir once more to evenly combine the seeds throughout.
  • Taste and add more maple syrup or honey if you’d like it a bit sweeter.
  • Portion into your bowl, then add mango purée and cut mangoes!
  • Add nuts to make it more healthier.
