Banana Fruit and Nut Cake

I love making the banana fruit and nut cake for my family especially for my grand children because it is very healthy and a fun way to get them to eat nuts and fruit. It is a great dessert and also well accompanied with coffee and tea.

Ingredients:

  • 4 ripe bananas
  • 200 g raisins
  • 100g chopped walnut
  • 100 g sultanas
  • 50 g currants
  • 100 g glacé cherries
  • 350 g wheat flour
  • 100 g self raising flour (maida)
  • 300 ml hot strong black tea
  • 100 g apricot chopped
  • 140 g light brown sugar
  • 1 tsp mixed spices
  • 1 tbsp ginger powder
  • 2 tbsp marmalade
  • 1 egg (can avoid and add 3 tbsp milk)
  • 4 tbsp honey
  • 1/4 cup water optional

Preparation:

  • 3Place all the fruits in a large bowl and pour the hot tea and soak for few hrs.
  • Heat the oven to 150 degrees C. Line a loaf tin or a round tin medium size and grease.
  • Mix flour, sugar, spices in a large bowl. Make a well in the centre, add soaked fruits tea, marmalade, egg and mix well. The mixture will look dry and firm.
  • Press into the tin and bake for 1 1/2 hrs or until the skewer inserted in the centre comes clean . (Ovens vary so please check after an hr)
  • Let it cool for 10 min before turning it out.
  • Warm the honey and brush it all over.
