Sel Roti Recipe (Nepali Traditional Sweet Bread)
Sel roti is a dish that is native to Nepal. This sweet dish is made from rice flour which is shaped into a ring and deep-fried. It is usually prepared for the Hindu festivals of Dashain and Tihar that are celebrated in Nepal.
Ingredients:
- Rice (soaked overnight) – 2 cups
- Sugar (adjust according to taste) – 1 cup
- Water – ½ cup
- Milk (optional, for richness) – ½ cup
- Ghee (clarified butter) or oil (for richness) – 2 tbs
- Cardamom powder (optional, for flavour) – ½ tsp
- Oil or ghee for deep-frying
Instructions
Soak the Rice:
- Soak 2 cups of rice overnight or for at least 6-8 hours.
Make the Batter:
- Drain the soaked rice and grind it into a smooth paste in a blender, adding water little by little.
- Add sugar, milk (optional), ghee, and cardamom powder.
- Blend until the mixture is smooth and of pouring consistency, like pancake batter.
Rest the Batter:
- Let the batter sit for 1-2 hours to let the ingredients meld.
Heat the Oil:
- Heat oil or ghee in a deep-frying pan over moderate heat.
- It should be hot but not smoking.
Frying the Sel Roti:
- Pour the batter in a circular motion into the hot oil using a small jug or your hand, creating a ring shape.
- Fry on medium heat until golden brown on both sides, flipping it with tongs or a spatula.
Drain and Serve:
- Remove the sel roti and drain the excess oil on paper towels.
- Serve warm with tea or as a side during festivals.
