Mason Jar Salad
Mason jar salads are an extremely easy and quick make at home lunch. They are especially great as they keep your ingredients fresh and crisp longer by separating the ingredients into layers.
Mason jars are easy maintenance since glass does not stain or retain flavors or odors; they’re easier to keep clean compared to plastic lunch containers. Keep those jars in the fridge until you need them. Shake the jar and have the refreshing salad anytime during the day.
Ingredients for Salad:
- Finely chopped cucumber – 1/2 cup
- Chopped red capsicum – 1/4 cup
- Chopped yellow capsicum – 1/4 cup
- Sweet corn – 1/4 cup
- Finely chopped/shredded carrots – 1-4 cups
- Sliced cherry tomatoes – 6
- Roasted peanuts/almonds – 1/4 cup
- Sliced jalapeños – 2
- Pitted olives – few slices
- Chopped lettuce – 1/2 cup
Ingredients for a Refreshing Sweet and Sour Dressing (Enough for 2 Jars):
- Juice of ½ lemon
- Honey – 1 tbsp
- Olive oil – 5 tbsp
- Pinch of cumin
- Pinch of salt
- Couple of chili flakes
Method:
- Layer the salad ingredients in the mason jar.
- Mix the salad dressing ingredients together and pour 1/4th cup into the mason jar.
- You can also add any homemade or readymade dressing on top.
- Refrigerate the jar and when consuming shake the jar with the lid on so that the seasoning and the vegetables mix together.
